Mustard Potato Salad

Ingredients

  • 2 lbs. small red potatoes, with skins
  • DRESSING: 1 cup (8 oz) mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons chopped fresh dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • fresh dill sprigs

Directions

  1. Scrub potatoes and place into a pot of boiling water
  2. Cook until tender, 20-25 minutes
  3. Drain and cool potatoes and cut into 1'' cubes
  4. Stir together the ingredients for the dressing.
  5. Toss with potatoes.
  6. Cool for 2 hours.
  7. Garnish with dill sprigs and slices of red onion
