Mustard Potato Salad

Ingredients
- 2 lbs. small red potatoes, with skins
- DRESSING: 1 cup (8 oz) mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons chopped fresh dill
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- fresh dill sprigs
Directions
- Scrub potatoes and place into a pot of boiling water
- Cook until tender, 20-25 minutes
- Drain and cool potatoes and cut into 1'' cubes
- Stir together the ingredients for the dressing.
- Toss with potatoes.
- Cool for 2 hours.
- Garnish with dill sprigs and slices of red onion
