Crispy Asian Slaw with Peanut Sauce

Ingredients
- 3 tablespoons unseasoned rice vinegar
- 2 tablespoons soy sauce
- 2 tablespoons creamy peanut butter
- 1 tablespoon coarsely chopped peeled fresh ginger
- 1 tablespoon packed brown sugar
- 1/2 head Savoy or Napa cabbage thinly sliced (5 cups)
- 1 red bell pepper, cut into thin strips
- 1 cup matchstick cut carrots
- 1/4 cup chopped fresh cilantro
- 2 green onions, thinly sliced, including green tops
Directions
- To make the dressing, combine vinegar, peanut butter, soy sauce giner and brown sugar in a blender to puree.
- Toss together the cabbage, pepper, carrots, green onion and cilantro
- Combine the dressing and toss to coat well
Notes
For a lower fat version, use reduced fat peanut butter
