Artichoke Dip

Prep Time: 15 minutes || Cook Time: 10 minutes || Total: 25 Minutes
Servings: 6 || Yields: 2 1/2 cups

Ingredients

  • 2 8oz. packages cream cheese
  • 1 14oz. can artichoke hearts, drained. Reserve brine.
  • 1/4 cup green onion, diced
  • 2 tablespoons Parmesan cheese, fresh grated or dry
  • 1/4 teaspoon bottled hot pepper sauce
  • 1/4 teaspoon white or black pepper
  • 1 clove garlic, minced
  • Salt to taste

Directions

  1. With electric mixer, beat cream cheese until fluffy, about 2 minutes.
  2. Cut artichoke hearts into quarters
  3. Mix artichoke hearts and brine to cream cheese.
  4. Mix well, about 2 minutes on low to medium speed
  5. With mixer on low, stir in green onion, Parmesan cheese, hot pepper sauce and pepper. Mix for about 1 minute
  6. Salt to taste
  7. Heat dip, stirring frequently, in a saucepan over medium heat.

Notes

Substitute Neufchatel for the cream cheese for 1/3 lower fat. Add hot pepper sauce, a drop at a time, for a spicier dip.
