High Altitude Banana Nut Bread

Dense and moist banana nut bread for high altitudes

Ingredients

  • 1/3 cup Shortening
  • 3/4 cup Granulated White Sugar
  • 2 Eggs
  • 1 3/4 cups Hungarian All Purpose High Altitude Flour
  • 1 cup Crushed Pecans
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 3 small/medium Mashed Over Ripe Bananas

Directions

  1. You will need 1 large mixing bowl, 2 small mixing bowls and a 9 x 5 glass loaf pan
  2. Preheat oven to 350 deg. F
  3. In a medium bowl, sift together the flour, baking powder, salt and baking soda
  4. In another medium bowl mash or beat the bananas
  5. In the large bowl, cream together the shortening and sugar.
  6. Add the 2 eggs and beat well.
  7. Slowly add in the flour mixture until mixed.
  8. Add the bananas and mix well.
  9. Add the nuts and stir/beat until just mixed.
  10. Pour the mixture into the well greased loaf pan.
  11. Bake for 55 minutes.
  12. Allow to cool 30 minutes on the counter before removing from pan. Cool an additional 30 minutes on a rack or plate.
  13. Once cut, keep covered to preserve moistness.
