Lemon Crusted Orange Roughy Fillets

Ingredients

  • 2 Tablespoons light mayo
  • 1/4 teaspoon grated lemon rind
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 (6oz.) Orange Roughy fish fillets
  • non-stick cooking spray
  • 1 teaspoon butter, melted
  • 1/3 cup dry breadcrumbs
  • lemon wedges (optional)

Directions

  1. Preheat oven to 450º
  2. Combine mayo, lemon rind, salt and pepper. Place fish fillets on a foil lined pan sprayed with non-stick coating. Spread mayo mixture evenly over fillets.
  3. Mix melted butter with breadcrumbs and sprinkle evenly over fish fillets.
  4. Bake for 10 minutes or until fish flakes easily.
